What's inside The bar has two main components. The outer shell is Zotter's 70% dark chocolate, made bean-to-bar in their Austrian factory. Inside sits a dark chocolate mousse made with 80% cocoa content chocolate, butter, invert sugar syrup, and sunflower oil. The mousse is soft and melts quickly on the tongue, releasing a concentrated, deep cocoa flavour. The ingredient list is unusually short for a hand-scooped bar: cocoa mass, cane sugar, cocoa butter, butter, invert sugar syrup, milk, sunflower oil, glucose syrup, salt, and Bird's Eye chilli. The Bird's Eye chilli is worth mentioning because it is easy to miss on the ingredient list but it does contribute to the overall flavour. It is not enough to register as heat in the conventional sense. Instead, it creates a faint warmth in the finish that makes the cocoa taste fuller and longer-lasting. If you have tried high-percentage dark chocolate that seemed to have a natural "glow" at the back of the palate, this is a similar effect, just nudged along deliberately. About Zotter's hand-scooped chocolate Zotter is a bean-to-bar chocolate maker based in Riegersburg, Austria. They roast, grind, conche, and temper all their chocolate in-house. The term "hand-scooped" refers to their production method: fillings are layered by hand onto long production lanes, one on top of the other, then coated and cut into bars. Zotter is a member of the World Fair Trade Organization (WFTO). Kaffebox Zotter Hand-scooped Chocolate Minis - 5 flavors Kaffebox Zotter Hand-scooped Chocolate Minis - 5 flavors 178 NOK What's in the box Each of the five bars uses Zotter's signature hand-scooped technique: distinct layers of filling are brushed onto long lanes by hand, stacked one on top of the other, then sealed in a final chocolate coating and cut into bars. The result is more like a layered bonbon in bar form than a conventional filled chocolate. Milk Chocolate Mousse: Dark milk chocolate (60% cocoa minimum) filled with milk chocolate mousse and milk chocolate ganache. Rich and smooth, this is the most classically chocolatey bar in the set. Chocolate Banana: Milk chocolate with a 55% banana centre. The banana flavour comes from freeze-dried bananas, so it tastes like actual fruit rather than artificial banana flavouring. Choco Bee: White chocolate filled with honey caramel crisps. A sweet, crunchy bar with real honey providing the flavour base. Wild Berries with Vanilla: Milk chocolate layered with a wild berry cream (raspberries, strawberries, blueberries, blackcurrants) and vanilla ganache. Fruity and creamy, with enough tartness from the berries to balance the sweetness. Butter Caramel: Milk chocolate filled with butter caramel cream, caramel crisps, and almond praline. This is Zotter's bestseller for a reason, the combination of salty-sweet caramel and roasted almond works well. About Zotter's hand-scooped chocolate Zotter is one of the few chocolate makers in the world that controls the entire production chain from raw cocoa bean to finished bar. Their factory in Styria, Austria, roasts, grinds, conches, and tempers all chocolate on-site. Josef Zotter coined the term "hand-scooped" to describe the process of layering fillings by hand onto long production lanes, a method that allows for complex, multi-layered flavour combinations that wouldn't be possible with conventional moulding or enrobing. Kaffebox Zotter Labooko 82 % Peru Craft Chocolate Bar Kaffebox Zotter Labooko 82 % Peru Craft Chocolate Bar 128 NOK Overview The Labooko 82% Peru is one of the standout bars in Zotter's single-origin range. At 82% cocoa, you might expect an aggressive, bitter chocolate, but this bar goes in a different direction. The Peruvian cacao used here is a heritage variety whose pods naturally contain around 30% white Criollo beans, one of the rarest and most prized cacao genetics in the world. The result is a dark chocolate that reads closer to 70% in terms of bitterness and mouthfeel, with a smooth, almost creamy texture and a flavour profile built around nuts, biscuit, and dried fruit rather than sharp acidity or tannic bite. Zotter sources this cacao from APPROCAP (Asociación de Pequeños Productores de Cacao de Piura), a cooperative of smallholder farmers in the Piura region of northwestern Peru. The beans include white Porcelana Criollo, which contributes the bar's characteristic mildness and the subtle sweet-cream quality in the finish. Tasting notes Zotter's own tasting profile for this bar describes biscuit and berry on the nose, followed by a palate that moves through nougat, sweet cream, raisins, grapes, lemon, and a hint of olive, finishing with a nutty and fruity quality and a touch of grapefruit. In practice, the dominant impression is warmth and smoothness: roasted nut and biscuit up front, dried fruit in the middle, and a long, clean finish without harshness.
