Honey processing removes the fruit skin but leaves some of the sweet mucilage on the bean as it dries, which sits between washed and natural. That is what gives this coffee its mix of clean structure and heavier fruit sweetness: apple and blueberry, dark chocolate through the middle, and a lime and floral lift on top. About the Caturrón variety Caturrón is a Caturra-descended variety grown in pockets of Huila and valued for sweetness and fruit character rather than high yield. It is far less common than the Castillo and Colombia varieties that dominate the country, so a lot like this is worth trying if you want to taste beyond the standard Colombian profile. Brewing The fruit and floral character is at its most expressive as filter: pour-over, batch brew, or immersion. If it tastes sharp, grind a little coarser or lower your water temperature slightly. A 250 g bag is roughly 16 brews at a 15 g dose. Kaffebox Austrått Kaffebrenneri – Finca Mesapata, Cusco, Peru – 250g Kaffebox Austrått Kaffebrenneri – Finca Mesapata, Cusco, Peru – 250g 288 NOK Overview A fully washed Bourbon grown at 2000 masl in Cusco, a high-altitude region in southern Peru that has become one of the country's more interesting specialty origins. Washed processing keeps the cup clean and lets the variety and altitude show through. This is a rounded, approachable coffee with a full body, light acidity, and flavours in the baking-chocolate, spice, and hazelnut range rather than bright fruit. Who it is for If you find some light-roasted coffees too sharp, this is an easier drink: sweet, nutty, and chocolatey, with enough body to hold up well with milk as well as black. Bourbon is one of the classic, well-regarded arabica varieties, valued for its sweetness and balance. Brewing Works well as pour-over. A good starting recipe: 15 g coffee to 255 g water (about a 1:17 ratio), medium-fine grind, water at 98°C. Pour in stages and adjust grind to taste. It also makes a comforting, low-acidity espresso if you prefer.
