It uses 39 mm conical burrs running at a slow 700 to 800 rpm, paired with a brushless induction motor and a sound-dampened chassis. The result is a grinder that's noticeably quieter than vibratory or high-rpm conical grinders, and that produces an 18 g dose in under 10 seconds. The control layout is three rocker switches: two programmable timed doses (typically set for single and double) plus a manual button for single-dosing or topping up. A magnetic portafilter fork holds the basket hands-free while grinding and adjusts vertically to fit different portafilter heights. The hopper holds 300 g of beans and uses an auto-close gate, so you can rotate the hopper off the grinder to swap beans without spilling. Grind adjustment and burr design Grind adjustment is stepless via a top collar, but with a deliberate clicked tactile feel built in. That gives you the resolution of a stepless grinder for dialling in espresso, with the muscle memory of a stepped grinder when moving between grind sizes. If you want flat-burr clarity and the lowest possible price, the Specialita wins. Overview The GS3 AV is La Marzocco's single-group home machine built around the same saturated brew group, dual stainless boilers and rotary pump found in their commercial line-up. The auto-volumetric electronics package (shared with the commercial GB5 AV) counts the water passing through the group via a flowmeter and stops the shot at your programmed volume, which makes recipes repeatable shot after shot. Both boilers are independently PID controlled, so brew and steam temperatures can be tuned separately to 0.1 °C. The machine runs on a 2.5 L front-access reservoir out of the box and can be converted to mains plumbing with the optional plumb-in kit, no internal modification required. A cool-touch double-walled steam wand handles back-to-back milk drinks from the 3.5 L steam boiler, and a mixing valve on the hot water tap blends steam-boiler water with cold water from the reservoir for tea or Americanos at a usable temperature. AV vs. MP: which one to pick The GS3 comes in two flavours. The AV (this version) is volumetric and button-driven: programmable pre-infusion, programmable shot volumes and an automatic backflush cycle. The MP (manual paddle) replaces the buttons with a paddle valve that gives you direct manual control over pre-infusion and flow. Pick the AV if you want repeatable, walk-up shots that anyone in the household can pull. Pick the MP if you want to manipulate flow profiles by hand on every shot. Pressure gauge Our Patent Pending system takes the pressure reading from inside the basket. Add to that the manual pressing of the lever arms, it enables you to manipulate pre-infusion, flow and pressure in real-time to get the best from your coffee. Extraction pressure Ignore the magic 9 bar, that figure originally referred to the pump output pressure of a Faema E61 machine, when in actual fact the pressure at the group will be lower, maybe even 1-2 bar lower. Traditional lever machines (as measured by us) typically extract at 6-7 bars, and since the basket and piston on the Robot are the same size, we suggest you initially aim for 6-7 bars as well and adjust as preferred. Temperature management The Robot is clearly not going to give you a La Marzocco type flat temperature profile. But water off the boil poured into a gently pre-heated basket will yield approx 95 deg c water, and will give you up to 88 deg c coffee output from the basket. Extraction ratios Certainly a 2:1 ratio of beverage mass to ground coffee is possible i.e. a 16g coffee dose can easily yield a 32g beverage weight. You can increase the beverage weight up to 40-45g if needed. Bottomless is best For best results we recommend using the portafilter without the spouts - but when using the pressurised basket it is best to use with the spouts attached.
