Overview SSP (Sung Sim Precision) is a Korean burr manufacturer that produces aftermarket replacement burrs for most major professional grinder platforms. This 80 mm set fits the Mahlkönig and Ditting 80 mm flat burr family, including the Tanzania and the Ditting 804 / 807. It is a direct replacement for the stock burrs: same outer diameter, same bolt pattern, same alignment. What the HU geometry does in the cup HU stands for High Uniformity. The geometry is designed to produce a tight particle size distribution with a medium amount of fines. In practice, that means stable pressure during espresso extraction, a dense and well-defined body, and a high-concentration cup with classic espresso character. It is a good match for traditional espresso, medium and medium-dark roasts, and for users who want a syrupy, full-bodied shot rather than the brighter, tea-like clarity that low-uniformity burrs tend to produce. SSP also makes the same 80 mm set in an LU (Low Uniformity) geometry, which has a wider particle spread, fewer fines, and faster flow. LU leans toward filter brewing and brighter, lighter-roast espresso. If you're unsure which to pick, HU is the more forgiving and traditional choice. About the Red Speed coating Red Speed is SSP's TiAlCN (Titanium Aluminium Carbon Nitride) coating. It increases surface hardness and reduces friction at the cutting edge, with two practical effects: the burrs stay sharp considerably longer (around 5,000 kg of coffee, vs. roughly 1,000 kg for uncoated steel) and they generate less heat during grinding, which helps preserve aromatic compounds in the bean. The coating itself doesn't meaningfully change particle distribution; that's set by the geometry. What it does The gauge screws into the plunger stem on a Flair 49 PRO or Flair 58 and reads brew pressure live as you pull the lever. On a manual lever machine there is no pump holding pressure for you, so the gauge is the only direct feedback you get while the shot runs. The 5 to 9 bar band printed on the face is the working range for espresso, and keeping the needle inside it is what makes shots repeatable from one day to the next. When to replace one Pressure gauges are consumables in the same category as o-rings and silicone parts. Common reasons to swap one out are a needle that no longer rests at zero, a face that has fogged or filled with condensation, or physical damage from a drop. A gauge that reads consistently wrong is worse than no gauge, because you will chase the error with grind adjustments that were never the problem. Compatibility This is the 42 mm black gauge, which is specific to the Flair 49 PRO and Flair 58. Pressure gauge Our Patent Pending system takes the pressure reading from inside the basket. Add to that the manual pressing of the lever arms, it enables you to manipulate pre-infusion, flow and pressure in real-time to get the best from your coffee. Extraction pressure Ignore the magic 9 bar, that figure originally referred to the pump output pressure of a Faema E61 machine, when in actual fact the pressure at the group will be lower, maybe even 1-2 bar lower. Traditional lever machines (as measured by us) typically extract at 6-7 bars, and since the basket and piston on the Robot are the same size, we suggest you initially aim for 6-7 bars as well and adjust as preferred. Temperature management The Robot is clearly not going to give you a La Marzocco type flat temperature profile. But water off the boil poured into a gently pre-heated basket will yield approx 95 deg c water, and will give you up to 88 deg c coffee output from the basket. Extraction ratios Certainly a 2:1 ratio of beverage mass to ground coffee is possible i.e. a 16g coffee dose can easily yield a 32g beverage weight. You can increase the beverage weight up to 40-45g if needed. Bottomless is best For best results we recommend using the portafilter without the spouts - but when using the pressurised basket it is best to use with the spouts attached. What it does The gauge threads into the plunger stem and reads brew pressure in real time as you lower the lever. On a manual machine there is nothing holding pressure steady for you, so the needle is the difference between pulling a shot by feel and pulling one you can repeat tomorrow. Flair's own guidance is to aim for 6 to 9 bar over a 25 to 30 second shot, and to adjust grind size rather than lever force when the pressure sits outside that window. Reading the dial The face is divided into bands. Below 6 bar usually means the grind is too coarse and the shot will run thin. The 6 to 9 bar band is where espresso lives. Above 10 bar the grind is too fine, and the top of the dial is marked as a stop area: continuing to press past it can damage the gauge and will produce a choked, unpleasant shot regardless. Treat the upper band as a warning rather than a target. When to replace one Pressure gauges are wear items, in the same category as o-rings and silicone parts. Replace yours if the needle no longer rests at zero, if condensation has fogged the face, or if it has taken a knock. Where the Multi-Purpose (MP) and High Uniformity (HU) burrs are built for everyday brewing and espresso, the BP is tuned for cupping, quality evaluation, and filter methods where maximum flavour transparency matters most. It produces very low fines and a wide particle spread, which translates to fast flow, short contact time, and a cup that reveals individual flavour notes with unusual clarity. SSP describes the BP as a "next-gen wide-spectrum" geometry. In practical terms, that means it prioritises resolution over body: you get a clean, articulate cup with well-separated flavour notes rather than a dense, heavy one. Users who have tried the BP on larger platforms (83 mm, 98 mm) report that it sits in a balanced middle ground, delivering transparency without the harshness or sterility that some high-clarity burrs can produce. Who the BP geometry is for The BP is most at home in a cupping or evaluation workflow, where the goal is to assess a coffee honestly rather than optimise for a particular brew style.
